What Are Milk Kefir Grains?
Milk kefir grains aren't grains in the cereal sense — they're a living symbiotic culture of bacteria and yeasts (a SCOBY-like community) that clumps together into small, gelatinous, cauliflower- shaped clusters. Under a microscope, each "grain" is a matrix of kefiran (a natural polysaccharide) with the bacteria and yeasts embedded through it.
What you drink — the fizzy, tangy, mildly sour kefir — is the drink. What you buy from us are the grains: the reusable starter that turns fresh cow or buffalo milk into that drink, overnight, on your kitchen counter. Feed them daily and they grow. Neglect them for a week and they slow down. Freeze or refrigerate them for longer breaks and they wait for you.
One tablespoon of grains ferments about 250–500 ml of whole milk in 18–24 hours at Bengaluru room temperature. The result is a soured drink with a probiotic count in the billions of CFUs — richer and more varied than most bottled yoghurts, and roughly a fifth the price once your grains have doubled a few times.

How to Use Your Milk Kefir Grains
Add grains + milk in a glass jar (1:10 ratio).
For 1 tbsp (~15 g) of grains use about 150 ml of fresh, cold, full-fat cow or buffalo milk. Pasteurised is fine; ultra-heat-treated (UHT) works but ferments a little slower. Skip the flavoured, lactose-free, or A2-marketed pouches for your first few batches — plain full-fat is what the grains grew up on.
Cover with a breathable cloth.
A muslin square, thin cotton napkin, or coffee filter held on with a rubber band. The grains breathe: don't screw a metal lid on tight or CO2 builds and the jar can crack. No metal — glass or food-grade plastic only.
Leave at room temperature for 18–24 hours.
Somewhere shaded, roughly 22–28 °C. When the milk has thickened to a drinkable yoghurt consistency and pulls slightly away from the jar walls, it's done. Longer = sourer; taste after 18 hours and let it go another few if you want more tang.
Strain with a plastic strainer.
Pour through a plastic mesh into a clean bowl. Save the grains — they're what you'll reuse. The liquid that comes through is your kefir. Refrigerate the drink and consume within 5–7 days.
Repeat daily.
Put the strained grains straight back into a clean jar with fresh milk and start again. Rinse them only if a batch tastes off; day-to-day the grains prefer to stay coated in a little kefir.
Bengaluru heat-wave note: From March to May the room can hit 32 °C in the afternoons — grains ferment fast. Start tasting from the 12-hour mark and, on the hottest days, park the jar in the coolest corner of the kitchen or briefly in the fridge if you can't strain in time. During the monsoon, expect the opposite — you may need the full 24 hours.
